THE LAS CRUCES SUMMERTIME AIR IS FILLED with scents of charcoal burning, burgers and dogs grilling, sunscreen, chlorine, and freshly mowed grass. A hot summer evening is the perfect time to invite friends and family over for a different kind of potluck: one that features cool, refreshing adult beverages. The cocktail potluck is one where you ask the guests to bring different types of spirits, liqueurs, fruits, syrups, and other ingredients for delicious summer drinks. The libations are then created based around the different items that your guests have brought to the party. These are some of the favorites that we created one evening.
OF COURSE, YOU CAN’T JUST SERVE YOUR GUESTS cocktails, so be sure to have some type of food that will hold up throughout the evening. I like to put some New Mexico red chile beans and ground pork in a crock pot and have it available all evening with crackers, chips, and cheese throughout the party with assorted accoutrements. During the summertime, one of the most refreshing items to present your guests is a great fruit salad. Get some fresh fruit at the store or local farmers’ market and toss in interesting items that were contributed for the cocktail potluck. Try my favorite fruit salad recipe. It pairs perfectly with an Aperol Spritz.
